Canadian Bacon, Onion, and Potato Egg Casserole

Ingredients

  • 3 medium gold potatoes, shredded

  • Half onion, chopped
  • 12 slices canadian bacon
  • 3 cloves garlic (crushed) 
  • 1 Tbsp olive oil
  • Salt
  • Pepper 
  • 12 eggs
  • 2 cups cottage cheese

Directions

  1. Add olive oil and Garlic to pan on medium heat until garlic starts to sizzle

  2. Add onions and saute for 2 minutes

  3. Add shredded potatoes, diced canadian bacon, salt and pepper, saute until potatoes are softened, about 10 mins mixing occasionally

  4. Add onions and mushrooms, saute for additional 10 mins or until onions are slightly soft

  5. Take pan off stove and let cool slightly

  6. Preheat oven to 350 degrees

  7. In medium to large mixing bowl add 12 eggs and whisk with fork until scrambled

  8. Add cottage cheese

  9. Add cooled potatoes, onions, and mushroom mixture into bowl with eggs, mix until combined

  10. Pour mixture into lightly oiled 9x13 casserole dish, cover with foil

  11. Bake for approximately 30 minutes covered plus 20 minutes uncovered or until eggs are fully cooked

  12. Let cool and cut into 8 equal slices. Place in a container with a lid and refrigerate or freeze, heat up when ready to eat.
