These are a healthy version of a cinnamon pinwheel. Perfect to go with your Saturday morning breakfast or to satisfy your after dinner sweet tooth without overloading on the calories.

Ingredients

    Dough

    • ¼ cup almond flour
    • ¾ cup all purpose flour
    • 1 ½ tsp baking powder
    • ½ tsp kosher salt
    • 1 Tbsp coconut sugar
    • ¾ cup greek yogurt

    Cinnamon filling

    • ¼ cup cottage cheese
    • ½ cup pitted medjool dates
    • 1 Tbsp cinnamon

    Icing

    • ½ cup Ovino sheep yogurt
    • 1 tsp vanilla paste
    • 2 Tbsp honey

    Directions

      Dough:

      1. Mix together dry ingredients in a mixing bowl, add yogurt and mix until dough forms. Knead on floured surface into a ball of dough

      Filling:

      1. Combine all filling ingredients in a food processor until smooth consistency with no lumps

      Icing:

      1. Combine in a small bowl and mix until well combined, set aside

      Assembly and bake:

      1. Preheat oven to 400F
      2. Roll out dough into approximately a 9x13 rectangle
      3. Carefully spread filling mixture evenly over dough (it is very easy to tear the dough)
      4. Roll up the dough with filling inside into a cylinder shape
      5. Use floss to cut cylinder into 6 even slices
      6. Place into lightly oiled baking pan, bake at 400F for 20 minutes or until golden brown
      7. Let cool, top with icing, and enjoy!
